Description

In this unit students participate in four weeks of full-time, supervised work placement in a food industry or a food service department of a government or non-government institution. The supervisory and assessment requirements, as defined by the Australian Dietetic Council, apply.

Prerequisite Rule

Students must have passed NUT6103, NUT6104, NUT6105 and NUT6106.

Equivalent Rule

Unit was previously coded NUT5109

Learning Outcomes

On completion of this unit students should be able to:

  1. Advocate for nutrition issues within the food service domain.
  2. Demonstrate an organised, reflective, professional, collaborative and ethical approach to working within the food service domain.
  3. Develop justifiable recommendations for food service management practice.
  4. Critically evaluate the impact of the food industry/food service system on individuals, groups and/or communities.
  5. Create relevant project resources.
  6. Apply nutrition management principles in the food service setting.
  7. Negotiate work goals with supervisors and colleagues for achievement of project outcomes.
  8. Demonstrate the application of evidence-based practice within the food service management domain.

Unit Content

  1. Application of food service management skills, knowledge and principles to achieve outcomes for individuals, groups, communities and the institution.
  2. Government and non-government documents/policies/standards relevant to nutrition and food.
  3. Health and safety in the Australian food industry.
  4. Management, communication and negotiation skills.
  5. Documentation styles and requirements of the workplace.
  6. Dietitians Association of Australia (DAA) documents: National Competency Standards for Dietitians in Australia 2015; DAA Statement of Ethical Practice; DAA Code of Professional Conduct.
  7. Professional work skills within a diverse range of settings.

Learning Experience

Students will attend on campus classes as well as engage in learning activities through ECU Blackboard.

WIL - Internship, Clinical or Professional placement (off-campus)

Students will undertake, and be assessed on, authentic activities through engagement with industry and community partners.

Work done in an actual workplace in which the student applies discipline-specific knowledge and skills, supervised by an industry professional separate from an ECU campus or location.

Additional Learning Experience Information

This unit consists of a four week, full-time placement within a non-government or government organisation. The placement provides students with the opportunity to apply the theory and knowledge of evidence-based practice in real world situations. The placement aims to develop skills in the area of food service management. A Preceptor and other staff on-site support and guide student progress and liaise regularly with the ECU representative and Food Service domain leader.

GS4 GRADING SCHEMA 4 Used for undifferentiated pass/fail units

Students please note: The marks and grades received by students on assessments may be subject to further moderation. All marks and grades are to be considered provisional until endorsed by the relevant Board of Examiners.

Due to the professional competency skill development associated with this Unit, student attendance/participation within listed in-class activities and/or online activities including discussion boards is compulsory. Students failing to meet participation standards as outlined in the unit plan may be awarded an I Grade (Fail - incomplete). Students who are unable to meet this requirement for medical or other reasons must seek the approval of the unit coordinator.
