Catherine is an Associate Professor in ECU's Nutrition & Health Innovation Research Institute.
Catherine leads a plant vasoactive research program which aims to identify dietary strategies to achieve and maintain cardiovascular and cognitive health. To date, her research has concentrated on the cardiovascular and cognitive benefits of dietary nitrate (from vegetables) and flavonoids (from fruit). Catherine has developed a substantial body of evidence that dietary nitrate and flavonoids improves vascular health through effects on nitric oxide. Her expertise includes clinical trials, nutritional epidemiology, development of food bioactive composition datasets, and circulating biomarkers for food bioactives and their metabolites.
