Caroline is a Post Doctoral Research Fellow in ECU’s Nutrition & Health Innovation Research Institute.

Background

Caroline's research has explored how plant-based compounds impact the risk of cardiovascular and metabolic disease. Her PhD focused on sulphur-based compounds in cruciferous vegetables (e.g., broccoli, Brussels sprouts) and their effects on vascular and metabolic outcomes. Caroline has expertise in nutrition epidemiology, preclinical studies, and dietary interventions. She has previously worked as a Registered Nurse and owned and run a large nutrition and allied health clinic incorporating personalised support, workshop delivery, and online programs. She is especially interested in the prevention and treatment of atherosclerotic vascular disease risk and finding strategies to lower risk across the lifespan.
