Simone is a postdoctoral research fellow in ECU’s Nutrition & Health Innovation Research Institute. Her research aims to investigate the link between stress, mental and heart health. Simone is particularly interested in finding new strategies to increase fruit and vegetable intake, to alleviate stress and improve heart health and mental wellbeing across all ages.

Simone’s expertise is on nutrition epidemiological studies and clinical trials, with focus on improving fruit and vegetable consumption, to alleviate chronic stress, improve heart health and mental wellbeing. Her research has been published in leading nutrition journals, such as Clinical Nutrition and the European Journal of Nutrition, and other nutrition-related papers in the premier bone journal, the Journal of Bone and Mineral Research, as well as reviews in Obesity Reviews.
